Method of Preparation
|
Dice chicken. Toss with 2 tablespoons Grapeseed Oil and 1 tablespoon Fajita Seasoning. Heat a large nonstick skillet over medium high heat. Add the chicken. Sauté until browned on all sides and cooked through. Transfer to a bowl. Heat remaining 1 tablespoon Grapeseed Oil in now empty skillet. Add the onion, bell pepper, and zucchini. Saute until tender, 5-8 minutes. Add the corn, black beans, and cooked chicken to pan. Stir together diced tomatoes with remaining 2 teaspoons Fajita Seasoning. Add tomatoes to pan; stir to combine. Simmer over medium heat for 5-10 minutes or until most of the liquid from the tomatoes is absorbed. Serve skillet meal over rice, pasta, or on a tortilla with desired toppings.
