What to do when you stop enjoying food? 


In the last post, we discussed how to organize your recipes in order to be able to look for inspiration and find your favorites more easily. But what if you feel like you just don’t enjoy food any more these days?

Don’t worry.

We understand. Even our favorites can start to seem pretty dull after a while. Plus, being so busy can mean you’re spending all that time in the kitchen, so that when you finally sit down to eat you've lost interest. 



Making the most of the cookbooks and recipes you have is one way to gain inspiration. Another way would be to try to recreate recipes you’ve enjoyed at restaurants. Some people are very conservative when they are eating out, sticking to the familiar such as pasta. In truth, this is a waste of time and money. Anyone can boil pasta and make any one of hundreds of sauces. Be more adventurous and try something new. If you can’t decide, ask your wait staff. They’ve eaten everything on the menu and will know what’s good.

What about taking a closer look at ingredients that the Culinary Chefs use? Would that excite you?

Another way of making fantastic tasting meals at home can be simple! We can show you how today!

Another way to gain inspiration is to try a recipe makeover. Pick one of your favorite recipes and try to make it healthier. Or, mix it up with different ingredients. Or, try a different cuisine. Start exploring Cajun or Indian cooking and experiment with all the luscious spices.


You can also try to eat your cookbook; that is, work your way through all the recipes in your favorite cookbook one at a time. Make notes as you go along. You’re sure to find some new favorites. 



If slaving away in the kitchen is really what’s getting you down, try some make and freeze meals. Buy some square plastic containers with tight-fitting lids and some plastic food storage bags.

Go to the grocery store, do your shopping, come home, and start cooking.



The principle behind make and freeze is to do all your cooking in one day to create meals you can eat that day, and then portion up the rest. You can then heat and eat them any time. This ensures you always have something on hand to eat, and making a number of dishes to rotate means you won’t get so bored. Best of all, if you have a busy family life, or anyone has allergies, you can color-code the lids and put tape on the containers to say what’s in them, and for whom.

Everyday Freezer Meals Workshop : Vegetarian Version


Everyday Meals Workshop – Vegetarian Version 


Attached is the grocery list for the Everyday Meals Freezer Workshop. Since you are going to be making a vegetarian version of this menu, please see the notes below for my suggestions on substituting things out:


1. Jambalaya- Omit the meat all together and double up on the veggies - 4 stalks of celery, 1 cup each red, yellow, and green pepper. You could add corn as well for more "meaty" texture. Do not double the tomatoes - keep that at one can.

2. Crock Pot quesadillas - Sub with black and/or pinto beans. One can of beans should be enough. Rather than preparing in the crock pot, simmer this on the stovetop for 20 minutes.

3. Perfect Roast Chicken - For this I'd have you season extra firm tofu, then skillet sear it. If you have a vegetarian substitute that you roast - such as a sliced butternut squash, that would work too. Recommended to use gardien - a widely available non GMO vegan vegetarian substitute - in the freezer section of most stores. This seasoning for this recipe would be enough for at least four of them - do NOT thaw - keep frozen.

4. Lemon Rosemary Pork Tenderloin – Try either a white bean and pasta mixture (one can of beans) with the seasoning, or do a firm tofu seared/skillet etc. If doing tofu - unless you are used to working with tofu - it's best to try to find the pressed kind (Trader Joes usually sells it). Otherwise it will be a mess if you don't squeeze out all the liquid. But one container should do it.

5. Crock Pot burritos – Keep the Rotel tomatoes, but add 2 cans drained black beans, 1 zucchini, 1 yellow squash, 1 onion, and 1 red bell pepper, all sliced. Cut the crockpot cooking time in half.

6. Lemon Rosemary pasta - Omit the chicken and add some veggies - broccoli is good in this one, asparagus, mushrooms, sundried tomatoes, artichokes, etc. This is really flexible with the amount and types of veggies. One bunch asparagus, one container mushrooms and one small jar of artichokes should od it. 1/4 cup of sundried tomatoes should suffice, too - any more & it might be overpowering.

7. Cajun Shrimp fettuccine - Omit the shrimp, add yellow and green peppers, and mushrooms. Call this one Cajun Peppers & Mushrooms w/ fettuccine. Mushrooms don’t freeze well - buy one container fresh the day you make it. For the workshop, one yellow and one red pepper for your ziplock bag.

8. Meatloaf - This is a tough one as I find the vegetarian version of ground meat doesn't blend well with eggs/oatmeal - the binding is difficult. I prefer to use a cooked lentil and oatmeal mixture - the recipe for this is below. You'll have garlic, eggs, oatmeal, salt, pepper, and hearty spaghetti blend on hand at the workshop to add. You'll need to bring the lentils (cooked), onions, grated cheese, and tomato paste.

9. Salmon - For this one I'd recommend doing the fish - but if you 100% do not do fish at all, thinly sliced tofu works or a firm veggie such as butternut squash is also fantastic. (amount: One container of tofu or 4 gardien patties)

10. Burgers - For this one I like portabella mushrooms (3-4) - but they definitely
take some marinating - so this would be one to definitely freeze, then thaw, as opposed to cooking immediately. Then grill the mushrooms as opposed to pan searing them. We'll also leave off the rancher steak rub until cooking time, as salt tends to "cook/sweat" the mushrooms prior to cooking.

Another option: use 4 gardien or 4 frozen veggie burgers - keep frozen.

MEATLESS LOAF
1 teaspoon salt
1 cup lentils, cooked & slightly mashed
1 small onion , diced
1 cup oats
¾ cup grated cheese (cheddar, swiss, jack or american)
1 egg , beaten
4.5 ounces tomato sauce
1 teaspoon garlic galore
1-2 Tablespoons Hearty Spaghetti Blend
¼ teaspoon black pepper

In separate bag: 1 (15oz) can tomato sauce with ½ Tablespoon Hearty Spaghetti blend


LENTILS SHOULD BE PREPPED BEFORE COMING TO THE WORKSHOP:
• Add salt to water and boil in a saucepan.
• (Boil 2 cups water to 1 cup lentils, add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated.
• Drain and partially mash lentils.


AT COOKING TIME:
Thaw freezer bag and drain excess liquid. Spoon into greased loaf pan & Smooth top with back of spoon. Bake at 350 degrees for 45 - 60 minutes until top of loaf is dry, firm and golden brown.Top with tomato sauce mixture & Cool about 10 minutes.
Run a sharp knife around edges of pan then turn out loaf onto serving platter.

Wildtree Freezer Meal Workshops – Saving you money on your food bill

I’ve been successfully leading Wildtree Freezer Meal workshops and can wholeheartedly testify to the fact that these workshops are saving people a LOT of money on their food bill…

Most people do not grocery shop for ten complete, protein-rich meals all at one time. This is the primary reason people look at the “upfront” cost of these workshops and hesitate a bit. Saving money takes a bit of planning – as well as taking a hard look at how we are spending money on food every month. I would guess that the majority of Americans do not even know what they spend on groceries each month. Do you add up every bit of food you buy for your home? According to the USDA Cost of Food Report (you can Google this to see for yourself!), the AVERAGE American family of four (with 2 grade-school aged children) is spending about $1020 each month on food eaten IN THE HOME. When you consider that the ten dinners you will make with Wildtree will cost approximately $150-$180 (that breaks down to about $2.50 - $3 per person/per meal), you can see that cooking this way will save you a whole lot of your monthly food budget!

If you were to go to the store right now and purchase everything you need for TEN complete and healthy dinners for 5-6 people(including meat in each of those ten meals) – how much do you think you would spend? Now think of the times you go out to dinner because you didn’t plan ahead or have nothing easy to prepare on busy evenings? I guarantee you that you would spend at least twice what the cost is for the ten meals you will make with Wildtree. Not to mention that with Wildtree freezer meal workshops, you go home with the ten meals PLUS the leftover Wildtree products for at least 20 more meals… This will even further push your food cost down! Most of my regular Freezer Meal customers tell me that they estimate they are saving about 25-30% on their food bill. That’s considerable savings!

But sometimes, people just honestly don’t want to spend that much all at once…. some prefer to spread out their budget more evenly over the month. Here’s a couple options to consider:

1) Purchase your Wildtree bundle first. This is usually done well in advance of the workshop. Then you can do your grocery shopping right before workshop day, which is usually 1 ½ to 2 weeks later, which is sometimes even in a different pay period.

2) You don’t need to purchase ALL the protein and groceries before the workshop. There are many customers who come to workshops with JUST their freezer bags. They fill the bags with the Wildtree recipes and extras that are provided at the workshop. Then, they can fill their bags later as they need them – buying only the meat they need for that coming week.

What is a FREEZER Meal Workshop?

Who has time to make Dinners anymore?

The cost is $76 (which must be pre-paid) and you get:

*7 full-size bottles/jars of Organic Wildtree spices/seasonings/sauces (all-natural, super healthy) with enough left over to take home and do all the meals again
*the complete recipes
*grocery list/preparation details
*side-dish recipes using leftover product
*freezer bag labels
*inventory document
*personal instruction

At the workshop we will prepare 10 organic meals at 6 servings each (or 20 meals at 3 servings each) which = 60 servings. Once I send the grocery list most people spend on average (depending on where you shop, of course) $76 (or come with some friends and get your groceries in bulk to make it even less!!).

So, $76 now for registration/package above about $76 in a few weeks for groceries = $152 / 60 servings = $2.53 per serving!  (And that's assuming you don't use any of your leftover groceries!  It's even less when you use up the leftovers)

Another way to look at it would be approximately $150 for 10-20 healthy, home-cooked, delicious and convenient meals (depending on the size of your family, these can last you 2 weeks to a month).

If you're on a tight budget you can always just come with your freezer bags and add the meat as you're able to buying only the meat you need for each week instead of purchasing it all up-front.
