Taco Stuffed Peppers

Method of Preparation


Preheat oven to 350°F. Heat a large nonstick skillet over medium high heat. Add the ground turkey and cook until cooked through. Add the Taco Seasoning and water; stir thoroughly. Bring mixture to a boil, reduce heat to low and simmer for 5 minutes. Remove from heat. Add the cooked rice, corn, black beans, diced tomato, and lime zest; stir to combine. Arrange the pepper halves in a baking sheet cut side up. Fill each pepper with the turkey mixture. Fill the bottom of the pan with water. Cover the baking sheet with aluminum foil and bake for 40-50 minutes or until peppers are knife tender. Remove foil from pan, top each pepper with cheese, and return to oven for 5-8 minutes or until cheese is melted and started to brown. Serve hot.

Preheat oven to 350°F. Sit each banana in a baking dish like a boat. Peel the top part of the peel away. Use a knife to slice all the way down the length of the banana, but do not slice all the way through the skin. Stuff each banana with the mini marshmallows. Bake for 10 minutes or until marshmallows are starting to melt and turn golden brown. Remove from oven, transfer to plates, and top with crush graham crackers and Chocolate Syrup. Use a spoon to eat the banana out of the peel.

Baked Spinach Balls with Garlic Lemon Dipping Sauce Preheat oven to 375°F. Heat the Grapeseed Oil over medium heat in a large nonstick pan. Add the spinach and sauté until wilted. Transfer to a mixing bowl. Once cool enough to handle, remove the liquid from the spinach by squeezing it with your hands. Work in small batches to do this. Once all the liquid has been removed, chop the spinach. Add the spinach back into the mixing bowl along with the bread crumbs, nutmeg, Garlic Galore, and Parmesan
