Cashew
Crusted Chicken (#1)
2 lb. Chicken Breast
3 Tbsp Wildtree Coconut Oil
In a
separate bag:
½ cup Cashew Meal or Almond
Meal
½ cup coconut flour
Combine the oil, seasonings
& chicken in a gallon size freezer bag, “smush” to allow seasonings to
distribute. In a separate bag mix the coconut flour & cashew meal together,
along with the pepper blends. Place the “flour mixture” bag between the outside
bag and the bag of chicken. Remove air
and freeze. When ready to serve, defrost bag in fridge Heat up a skillet
with 1 Tbsp coconut oil. Take chicken out of bag and coat each chicken breast with
the coconut flour/cashew mixture. Place in heated skillet and cook about 10 min
on each side until middle is no longer pink. Serve over a salad, or with a Whole30
compliant side item of your choice (see additional recipes). Serves
4-6
