The Best Vegan Mango Berry Ice Cream Cake
Oh My! You just can't go wrong with Mango's and Berries! Enjoy this Vegan Mango Berry Ice Cream Cake at home! Impress the family and friends! Ingredients 1 1/2 cups pitted medjool dates 1/2 cup raw almonds 1/2 cup rolled oats 2 tablespoons Wildtree Chai Tea Mix 1 tablespoon Wildtree Organic Coconut Oil, melted 5 frozen bananas 2 cups frozen raspberries 1 teaspoon Wildtree Very Berry Cheesecake Blend 2 cups frozen mango chunks 8 fresh strawberries 2 fresh bananas ----------------------------------------- Method of Preparation Place the dates and almonds in a food processor and process into small crumbles. Add the oats and Chai Tea Mix and process until the oats almost reach a flour-like consistency. Drizzle with Organic Coconut Oil and process for 15-30 seconds to combine. Transfer the mixture to a springform pan and gently press into an even crust. Clean the bowl of the food processor and add 3 frozen bananas, frozen raspberries, and Very Berry Cheesecake Blend to the processor and blend until smooth. Spread the mixture evenly over the crust. Slice the 2 fresh bananas and arrange the slices in a single layer over the top of the berry layer. Place in freezer for 2 hours, or until the puree layer is firm. Place the remaining 2 frozen bananas and the frozen mango chunks in the food processor and blend until smooth. Remove the cake from the freezer and spread the mango mixture on the top. Return to the freezer for 2 more hours, or until the top layer is firm. Slice the fresh strawberries and arrange in a single layer over the top of the cake. Spicy Sweet Potato Fries
Spicy Sweet Potato Fries
When growing up I never would even try a sweet potato!
But it was once a year at our house, Thanksgiving time to try sweet potatoes loaded up with butter and brown sugar, oh and don't forget the marshmallows! How can you go wrong with all the extra sugars, hehe! But, once a year I would at least try the sweet potatoes, even if it was eating the top sugary filling!
Well, many, many years later --- I wonder why I'm over weight and can't lose weight!? Because the simple things in life, with their own sugars, should be eaten daily -- at least weekly! So recently I've changed my food diet to be more Vegan. Tired of the the aches, pains, tiredness every day! I have to change my mindset and figure out what is better for my body! Taking away dairy and meats is changing my body and my mindset daily. I feel so much better and free. My mind is clear and I feel more positive as the "change" happens.
Stopped by last week to buy a bulk amount of sweet potatoes from Sam's Club. I have to say I was impressed with the sweet potatoes they had. So, I've been on top of the sweet potato fries and making them different each and every time. You can make them on how you feel today -- sweet or savory. What do you want! No one else makes them your way, so make it your way!
Today I'm make spicy sweet potato fries in my own kitchen.

- 450 degree oven and cook 158 minutes on one side, flip and add another 15 minutes.
- I added my spicy flavors from Wildtree the Spicy Carne Asada Seasoning
- A small amount of Natural Grapeseed Oil to get my spices to stick
So I ended up with Tacos and some sweet potatoes! Yummie!

How To Make Datorade
How To Make Datorade
I just learned about this fantastic drink called "Datorade!" I have been following the "Freely the banana girl and she shares this drink" This drink is soo amazing. At first I thought "oh, my! yuck!" But, you should NEVER make a decision till you try something, right? So I let my medjool dates sit in water for a few hours, to soften up. Once soften, you can remove the "seed" they have in side them (make sure to do this).
Now, you have your medjool dates ready to mix up and enjoy. Add your dates to a blender, mixer, whatever you have. You blender should be high speed. I did not have enough water in my first blend, so I added more water and a little bit of almond milk. OH MY! this is soo amazing and tastes fantastic. I think it will be a go to drink for now on!
Depending on your dates and how soft they are, will depend on your final result and mixture. I am going to add some to my glass jar and keep in the refrigerator to drink all day long. The drink gives you soo much energy, allows you to lose your sweet tooth, and it's soo creamy with a white foam on top!
Enjoying a fantastic Sunday breakfast with apple pancakes, apples and my Datorade! If you try it, share you ideas below. Some other options I want to try is adding some cinnamon to my foam on top or when I blend. I'm sure there is many ideas to change it up, but it's perfect as is.
I don't drink wine but maybe once or twice a year, so I put all my favorite drinks in my wine glasses. This Datorade is perfect for the wine glass affect, 5 star yummy! Here is my breakfast today.

The Best Vegan Snickerdoodles

Preheat oven to 350ºF and line a cookie sheet with parchment paper. In a small bowl, mix together the sugar and cinnamon and set aside. In a medium-sized mixing bowl, stir together Snickerdoodles, soy milk, and melted Organic Coconut Oil until a soft dough forms. Shape dough into 12 small balls and roll in cinnamon sugar. Press onto the parchment-lined cookie sheet and bake for 10 minutes or until cookies are set and slightly browned on the edges. Allow to cool completely before serving.
