Salted Caramel Espresso Bars
Salted Caramel Espresso Bars
Submitted By: Wildtree
Number of Servings: 36
Prep Time: 90 minutes
Cook Time: 35 minutes
Ingredients:
2 packets Wildtree Dessert Bar Crust
1/2 cup butter, melted
1/2 teaspoon cinnamon
1/2 cup heavy cream
1/2 cup butter
1 tablespoon water
1 1/2 cups sugar, granulated
2 cups chocolate chips, semisweet
1/2 cup heavy cream
2 teaspoons instant espresso powder
1 teaspoon sea salt
Method of Preparation:
Preheat oven to 350°F. Grease a 9x9 baking pan. Mix the
two packets of Wildtree Dessert Bar Crust with cinnamon
and then add 1/2 cup melted butter. Mix until fully
incorporated. Spread the mixture evenly as possible on the
bottom of the pan and bake for 15 minutes. While it bakes,
melt the second 1/2 cup butter with the first 1/2 cup heavy
cream. While the crust cools for 10 minutes, heat the sugar
in a pot on high heat. Do not stir but keep watching the
pot. When the sugar begins to smoke lightly, pour in the
melted butter mixture and stir off the heat. CAUTION, the
pot will boil vigorously. Place back on the heat to dissolve
the lumps and thicken the caramel. Heat to 235°F and pour
over the crust. Let the caramel cool for 10 minutes and put
in the freezer for an additional 20 minutes so it stiffens up.
While the caramel is in the freezer, mix the chocolate chips
and 1/2 cup heavy cream in a metal bowl. Heat over a pot
of simmering water, stirring the chocolate constantly. Once
the chocolate has melted completely, stir in the espresso
powder. Remove from the heat and spread over the
hardened caramel. Sprinkle sea salt on the warm chocolate.
Refrigerate for 1 hour before removing the bar from the
pan by running a knife along the inside of the pan and
flipping it on top of a cutting board. Cut into 36 squares and
store in the refrigerator until ready to eat.

Can You Fry Foods in Coconut Oils?
Cooking with coconut oil
Unlike many other cooking oils, coconut oil is very stable and can withstand high cooking temperatures (thanks to its high constitution of saturated fats). It’s perfectly suitable for sautéing, baking, roasting, and even frying.Unrefined coconut oil has a strong “coconutty” flavor and aroma, which is great to use in your recipes if you’re a fan of that profile. If not, go for the refined coconut oil, which is extremely neutral in both taste and aroma. (And if you’re wary of buying refined oils, look for a coconut oil brand that is naturally refined and unbleached.)
To sauté and stir-fry with coconut oil, simply use it in place of the oil called for in your recipes and you’ll be able to kick up the heat a bit higher than if you were using olive oil. Of course, if your oil ever starts to smoke intensely or turn gray/black while cooking, you can assume that it’s been overheated and needs to be refreshed with new oil. Note that refined coconut oil will withstand cooking temperatures up to around 450°F, whereas unfiltered (virgin) coconut oil has a smoke point around 350°F.

Grill Like a Pro this Summer!
Grill Like a Pro this Summer
Grilling season is upon us and we couldn’t be more excited! Between cookouts, family parties, and those summer burger cravings, you’re bound to put in some serious time over the burners. But before you grab your tongs and favorite marinade check out these expert tips and become a grill master in no time.
- Turn up the heat. Allow your oven to preheat at least 10 to 15 minutes before grilling. The hot grates will prevent your food from sticking (and help create those great grill marks!).
- Read the label. Add some flavor to your meal but be mindful of the ingredients. Marinades and rubs with higher sugar content will burn more quickly.
- Be patient. Don’t jump the gun on flipping your food and try to avoid poking at it with a spatula. You want the juices to stay and it to flip when it’s ready.
- Eat your greens. Charred veggies are trendy and delicious. Experiment with different kinds and add some color to your plate.
- Let it rest. Always let your meat sit for 10 minutes before serving. This allows for the juices to evenly redistribute resulting in a moist and flavorful piece of protein.
- Keep it clean. Be sure to maintain a clean grill. Doing so will prevent grease fires and keep the grates from sticking to your next meal.
Looking for something new to grill? Take a night off from burgers and dogs try one of these tasty summer dishes. Click on the picture for the full recipe.

What is a FREEZER Meal Workshop?
Who has time to make Dinners anymore?
The cost is $76 (which must be pre-paid) and you get:
*7 full-size bottles/jars of Organic Wildtree spices/seasonings/sauces (all-natural, super healthy) with enough left over to take home and do all the meals again
*the complete recipes
*grocery list/preparation details
*side-dish recipes using leftover product
*freezer bag labels
*inventory document
*personal instruction
At the workshop we will prepare 10 organic meals at 6 servings each (or 20 meals at 3 servings each) which = 60 servings. Once I send the grocery list most people spend on average (depending on where you shop, of course) $76 (or come with some friends and get your groceries in bulk to make it even less!!).
So, $76 now for registration/package above about $76 in a few weeks for groceries = $152 / 60 servings = $2.53 per serving! (And that's assuming you don't use any of your leftover groceries! It's even less when you use up the leftovers)
Another way to look at it would be approximately $150 for 10-20 healthy, home-cooked, delicious and convenient meals (depending on the size of your family, these can last you 2 weeks to a month).
If you're on a tight budget you can always just come with your freezer bags and add the meat as you're able to buying only the meat you need for each week instead of purchasing it all up-front.
The menu will change monthly. Contact me today to get you started!

Make your own Energy Bars at home!
Energy Bars, Granola Flavor (Fight Allergies, Alzheimer’s?!)
POSTED ON MAY 19, 2014 BY JENNIFER COTE
My husband’s on for the protein shakes I make every morning; even salad for lunch. But sometimes he needs an extra snack. These are perfect (and healthy) for husbands, kids, and others to munch on as needed!
Raw honey (local if possible), plus the bee pollen, can help allergy sufferers approach symptoms nutritionally. (Lots of special nutrients and enzymes in pollen can really help!) Cinnamon helps insulin to work better (good for diabetics, and others), with some potential in preventing Alzheimer’s. So I figure we’re well-covered when we snack on these. Makes 12 servings or so.
