    Grapeseed oil has a smoke point of 445°F 9 which makes it a good choice for frying. The "smoke point" is the temperature at which an oil begins to physically break down. Concerned about oxidation from cooking? Don’t be! Researchers in 2012 heated various types of oil to test rancidity levels. It was not until after 2 hours at 180°C (356°F) that grapeseed oil began to show a significant increase in rancidity. 8
