Spicy Whole Wheat Pizza

Ingredients

1 bag Wildtree So Quick & Easy Whole Wheat Pizza Dough, dough prepared according to package directions
½ cup onion, diced
½ cup bell pepper, diced
½ cup zucchini, diced
1 (8 ounce) can tomato sauce
1 ½ cup part skim mozzarella, shredded

Method of Preparation

Preheat oven to 450 °F. Heat Grapeseed Oil in a nonstick skillet over medium heat. Add the vegetables and sauté until tender, about 7 minutes. Add the tomato sauce, Fra Diavolo, and Garlic Galore. Stir to combine. Reduce heat to simmer, cover, and cook 5-10 minutes to allow flavors to develop. Remove from heat. Roll pizza dough out to desired shape; place on a lightly greased baking sheet. Spread sauce over dough in an even layer. Top with mozzarella. Bake 12-15 minutes until crust is golden and cheese is melted.

Pumpkin & Kale Lasagna


Ingredients

12 lasagna noodles, prepared according to package directions
2 (15.5) ounce cans pumpkin puree
2 eggs, beaten
¼ cup Parmesan, grated
1 cup part skim mozzarella, shredded
2 tablespoons fresh sage, minced
4 packed cups kale, stems removed and chopped
2 tablespoons butter
2 tablespoons flour
2 cups milk
2 tablespoons dry couscous

Method of Preparation

Preheat oven to 350°F. In a bowl whisk together pumpkin puree, eggs, and Rancher Rub; set aside. In a separate bowl combine the Parmesan, mozzarella, and sage; set aside. In a nonstick skillet heat the Grapeseed Oil over medium heat. Add the kale and Garlic Galore; sauté until kale is wilted, about 3 minutes. Transfer to a bowl and set aside. In a saucepan melt the butter over medium heat. Whisk in the flour, cook for 1 minute. Add the milk and Alfredo mix and whisk until smooth. Stirring often, heat the mixture over medium heat until it begins to thicken slightly, about 5 minutes. Do not let the mixture boil. Grease a 9 x 9 baking dish. Pour about half of the Alfredo sauce in bottom of dish. Add layer of noodles (they may need to be trimmed) then spread noodles with half of pumpkin mixture. Add another layer of noodles, followed by half of the mozzarella and Parmesan mixture. Add all of the sautéed kale. Sprinkle kale with all of the couscous. Add layer of noodles. Spread noodles with remaining pumpkin mixture. Top with remaining mozzarella and Parmesan mixture. Add one last layer of noodles. Pour remaining Alfredo sauce over everything. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15 minutes. Let lasagna cool 10 minutes before serving. Calories 390; Fat 15g; Saturated Fat 7g; Carbohydrates 49g; Fiber 5g; Protein 17g; Cholesterol 75mg; Sodium 380mg

“SAVORY SELECTIONS” FREEZER MEAL WORKSHOP

“SAVORY SELECTIONS” FREEZER MEAL WORKSHOP

Grocery List and Pre-Workshop Prep instructions
Are you ready to tame dinnertime? In about 60 minutes you are going to have prepped 10 meals to stock your freezer! What a time-saver! These meals are going to make your dinnertime less chaotic and much more enjoyable.
The Wildtree product bundle you purchased will be waiting for you at your workshop. You will have some Wildtree product left over so you will be able to go home and make more freezer meals  You will also be receiving recipes with ideas of other meals and side dishes that you can make with your Wildtree product bundle.

Please read this through before going to the store with the list on page 2.
Below is a list of suggested PROTEIN for the recipes – the name of the meal is listed next to the corresponding protein. All protein can be substituted for the protein YOU want in your meal. For instance, if you don’t like chicken thighs, you can substitute chicken breasts, etc. You are also welcome to make substitutions to suit your family size and budget. Each meal is meant to serve at least 4. If there are only 2 adults, you may choose to buy a smaller quantity of each meat, or you may choose to split each meal into 2 meals, leaving with 20 meals. This workshop should be all about your family’s meal needs.
On the next page is a grocery list that can be taken to the grocery store. Be sure to check your freezer for any current protein/items you may already have, or use the abridged list below to determine if you will be substituting anything on the meals.

 Note that there are some meals that will need extra ingredients to complete the recipe. For example; lettuce for the Asian Lettuce Wraps. Before thawing the freezer bag for a meal, make sure you have the extra items on hand. These will be noted on the label you will put on your freezer bag at the workshop.

Method of Preparation


Combine all ingredients in a pitcher. Cover and #refrigerate over night for best results. Serve over ice if desired.

What is Carrageenan ?

Found in: Dairy products, non-dairy alternatives (coconut milk, rice milk, soy milk, etc.), processed lunch meats, and some supplements
What does it do? It’s a thickener, and especially used to replace fat.
Is it safe? Probably not.
Just from rat studies, you might think there’s nothing to worry about. The WHO has established an Acceptable Daily Intake of carrageenan as 0-75 mg/kg bw. Average daily intake is approximately 250mg/person/day, which falls well toward the low end of the “safe” spectrum.  In order to show any risk to humans, the studies supposedly showing a high risk would have to approximate this level. The animal studies linking carrageenan to intestinal inflammation and leaky gut don’t pass this sniff test. For example, in rats, an administration of either 9,690 mg/kg bw or 3876 mg/kg bw made colon tumors worse: no kidding! This paper  gives a useful overview of the problems with the rodent studies. But that doesn’t mean the stuff is good for you.
In human studies, some evidence shows that carrageenan increases intestinal permeability.  A study on isolated human intestinal cells found that carrageenan was inflammatory, and suggested it as a factor in the development of inflammatory bowel disease. In another study on isolated intestinal tissue, researchers found that carrageenan had a significant effect on the cells, although they didn’t link it to any specific disease.
Studies in real live humans would be better, but since these are obviously out for reasons of medical ethics, isolated human tissue is a lot more convincing as an experimental subject than rats. It’s probably safest to avoid carrageenan, at least until we have more research.

What does it do? It’s an antimicrobial agent to prevent bacteria from growing in the foods.
Is it safe? Probably not. Sodium benzoate by itself is not dangerous, but when it combines with Vitamin C, it can form benzene, which is a recognized carcinogen. The food industry likes to point out that we also get benzene from breathing polluted air and drinking polluted water, but this doesn’t mean we shouldn’t eliminate it where we can! Fortunately, there’s not a lot to worry about for the Paleo crowd, since by far the largest source in the modern diet is soft drinks.

What do they do? BHA and BHT are antioxidants.

Is it safe? Possibly. Some studies  show that very high amounts of these chemicals cause tumors in rodents, but others failed to establish the same correlation at normal levels in humans. Other studies even suggest potential health benefits. But the major concern with BHT from a Paleo standpoint isn’t that it’s harmful in itself, it’s that it indicates a processed, low-quality source of fats. Avoid it as a marker for unhealthy fats like trans fats, or fats that have been poorly treated, not on its own

What does it do? It’s a preservative – it’s basically salt (one of our oldest known preservatives) but a kind of salt that doesn’t contain sodium, which pleases the USDA and everyone who buys into their misguided recommendation to reduce dietary salt at all costs.
Is it safe? Yes. It’s just salt. It’s also used on roads as a de-icer, but so is regular salt. If you inhale it, it’s toxic (just like regular salt), but using it as a preservative is fine.
